* Supporting the Head Chef in the overall kitchen operations whilst leading and motivating junior kitchen team members.
*preparing all kitchen items within his section up to the standards set by the management.
* Responsible for the production, preparation and presentation, taste, portion size of all food items to ensure highest quality and consistency at all times.
* Ensuring all preparation and cooking in the kitchen area is carried out in accordance with the Health and Hygiene Regulations.
* Ensuring a correct labeling of the prepared items, as well as the production and expiry dates of all products.
* Work closely with Old Diamonds Management team to create new concepts.
* Assist in the organizational structure
* Exercise all hygiene practices according to the company standard
* Handle with care the uniforms provided by the company and make sure not to be damaged.
* Should report for any loss / found any items inside the premises have to report to his concern reporting manager.
* Practice his/her duties and responsibilities according to the company policies and procedures.
* Exercising Kuwait Health Administration and follow Municipality guide lines
* Controlling the portioning in accordance with the technical sheets and controlling the food cost keeping waste to minimum and low pars.
* Ensuring all equipment is in safe working order and to report any hazardous or faulty equipment to the Operations Manager.
* Ensuring the kitchen and fridges are kept clean and that there is a proper rotation of stock in the fridges (FIFO).
* Ensuring and being responsible of applying high standards of personal appearance and hygiene are being applied.
* Inspecting and evaluating quality of raw foods received and finished food products.
* Establishing an up-to-date standard recipes file with pictures and ensure the compliance with them.
* Maintaining control over assigned budget areas of food, supply, and labor costs, taking corrective action as needed to meet budget expectations with the approval of both of the HR and Operations Manager.
Inspecting storage areas to insure that the best sanitation is maintained ant that all equipment are functioning properly.
* Recommending measures to improve production/service methods, equipment performance, scheduling, quality control, and suggest changes in working conditions and use of equipment to increase efficiency and safety of the food service operations.
* Performing administrative activities such as preparation of requisitions and inventories for food and supplies, weekly schedules
* Ensuring all the members of the kitchen team are familiar with their daily tasks and provide on-going refresher training as needed with the current employees and implement Training Program on food and product knowledge with all new starters and monitor their performance.
* Performing Human Resources functions including hiring, selecting, training, evaluating, motivating, including disciplinary action (In accordance with HR and Operations Manager)
* Communicating regularly with all the Kitchen members (by conducting daily briefings) and the rest of the catering team as well as the management team and third parties
* Supervising all employees during the set-up, service and breakdown.
* Maintaining Organizational and departmental policies and procedures as well as country law such as labor law (In accordance with HR)
* Performing other tasks or projects as assigned by Old Diamond management.
* Having full knowledge of Old Diamond standards and Municipality rules and Regulations.
