The Chef Chocolatier provides culinary expertise,
concepts and chocolate product prototypes. They will answer concept briefs from
the marketing department and propose new products to be launched across the
different markets in the GCC. They will work in close cooperation with the
operations, commercialization, quality and marketing departments. The Chef
Chocolatier will report to the Executive, and will manage a small team in the
chocolate department.
- Responsiblefor tempering all types of chocolate using several skills to create all types
of moulded or hand shaped confections.
- Knowledge of raw materials, production processes, quality control, costs, and other
techniques for maximizing the effective manufacture and distribution of goods.
- Having extensive knowledge involving the history, flavor, texture and other properties
of chocolate in order to properly create desserts, candies, sculptures and
decorative pieces.
- Basic knowledge of how to properly temper and mold all types of chocolates.
- Knowledge of how to decorate confections using all types of decorating materials (. spray gun, transfer sheets, writing skills on confections…etc).
- Having creative and artistic ability and vision to create a profitable business with
chocolate.
- Prepare ingredients and assist with chocolate production.
- Daily cleaning of the kitchen including machines, preparation surfaces, and utensils.
- Ability to perform other tasks in packaging/wrapping and the front of the store, as
needed.
- Ability to create and document recipes for chocolate.
- Able to meet deadlines and prepare mass quantity
of chocolates required every month.
